Goat Cheese Chive Bacon Balls

Whether you want a low carb snack or an elegant hor d’oeuvre. You can’t go wrong serving these goat cheese chive bacon balls.

I’m not really sure if it is the many years I worked in Garde Manger. Or if it comes from fond memories of holiday family get together’s. Whatever the case may be, this recipe for goat cheese chive bacon balls are full of flavor and memories.

For the holidays my Gram would always make a huge spread of relishes, little bites and a tray of cheese and crackers for everybody to nibble on prior to the big meal. What sticks out most for me when I reflect on those meals, besides being with family, was the little crocks the port wine cheese came in. The holidays also meant our stops to Hickory Farms store in the mall would be more often.  I always looked forward to our trips to specialty food stores. Thirty some on years later and I still that same little kid when I happen upon a new store to explore.

Working with goat cheese plays off of those memories and feeds into the passion I have for playing with food. Goat cheese can be molded, shaped, eaten as is or added to a cream sauce. There is seemingly no end to the things you can do with goat cheese. Sort of the same thing can be said for bacon. But more in the realm that bacon can be added to or eaten with just about anything. Not to mention, but, in my mind and on my palate, goat cheese and bacon go together like salt and potatoes, butter and warm crusty bread.

For little bites that have some much flavor, there is just a few ingredients needed to make them. Just goat cheese, cream cheese, bacon, chives and toasted almond dust.

Goat Cheese Chive Bacon Balls

Place the goat and cream cheese into a mixing bowl and bring together. Next add the bacon and chives and mix until well blended and the ingredients and evenly dispersed. Place mix in the fridge for 20 minutes to firm up.

Goat Cheese Chive Bacon Balls

Once chilled and firm, use a spoon or small disher to form the mix into walnut sized balls. Roll the balls between two hands to smooth and round, then roll in the almond dust. To make the almond dust, simply process and handful or two of toasted almonds in a food processor until small crumbs are achieved.

Ingredients
  • 8 oz Goat Cheese
  • 4 oz Cream Cheese
  • 1 cup Chopped Bacon a good applewood smoked brand
  • 2 tbsp Chives, minced
  • 1.5 cup Almond Dust
Instructions
  1. In a mixing bowl combine the two cheeses until smooth.

  2. Add in the bacon and chives and mix until evenly distributed.

  3. Place mix in fridge for about 20 minutes or until well chilled.

  4. With a disher or spoon, form mix into walnut sized balls. Should get around 14, and then roll between two hands to smooth and form perfect balls.

  5. Roll bacon balls in the almond dust to cover. Enjoy.
