Italian Cucumber Tomato Salad
This recipe for Italian Cucumber Tomato Salad is a very favorite of my family’s and enjoyed at many a summer cook out. It’s flavors are bright, fresh and just plain simple.
No lie, my girls love this salad. When I’m in the kitchen cooking away and they ask “what’s for dinner?” and I mention this salad, the “ooh’s” are almost instantaneous. What’s really great about this salad is how quick it is to make and how many different things you can add to the salad to make something different. Another great thing about this salad is the longer you let all the flavors marry and marinate, the better the salad tastes.
Let’s Make It
To start the Italian Cucumber Tomato Salad, dice the cucumber into medium size pieces.
Cut the vine ripe tomatoes into equal size pieces and to the bowl with the sliced red onions.
Now add the chopped fresh oregano, red wine vinegar, olive oil, sugar, granulated garlic, dry mustard, kosher salt and fresh cracked pepper to taste. Toss all ingredients with a spoon to fully mix, wrap and chill for no less than half an hour. Transfer the Italian Cucumber and Tomato Salad to your favorite serving bowl and enjoy.
- 1 each English Cucumber Medium Dice, aka seedless
- 3 each Small - Medium Vine Ripe Tomato Medium Dice
- 1/4 cup Sliced Red Onion
- 1 Tbsp Fresh Oregano Chopped
- 1 tsp Ground Dry Mustard Coleman's
- 1/2 tsp granulated garlic
- 1 Tbsp White Sugar
- 1/4 Cup red wine vinegar
- 1/4 Cup olive oil
- 1 tsp Kosher Salt
- TT Fresh Ground Black Pepper
