Italian Sausage Potato Sheet Pan Dinner

Ingredients

  • 5-6 each Yukon Gold Potatoes cut into small wedges
  • 3 each Assorted Pepper Julienned. I used one yellow, one orange and one cubanelle
  • 1 each Small Sweet Onion Julienned
  • 8 each White Mushrooms Quartered
  • 3-4 cloves Fresh Garlic Pressed
  • 6 links Italian Sausage Spicy is nice
  • A/N Olive Oil, as needed
  • TT Salt and Pepper

Instructions

  1. Dice potatoes into small wedges and toss in mixing bowl with olive oil and salt and pepper.

  2. Place seasoned potatoes, cut side up, on sheet pan prepped with pan spray and then place in 425° oven for 25 minutes. Set bowl aside.

  3. As the potatoes are roasting, julienne the peppers and onions. Quarter the mushrooms and crush the garlic. Toss all in the potato mixing bowl with olive oil, salt and pepper.

  4. At the end of the first 25 minutes, take the sheet pan out of the oven and push the potatoes to one side. Spread the veggies around in the open space and place the sausages on top.

  5. Return pan to oven and roast an additional 25 minutes. Remove, plate and enjoy!

Recipe Notes

For added flavor, freshly grate some romano or parmesan cheese on top as soon as it come out of oven.
