Mama's Sweets (Italian Cookies)

Lightly sweet and soft Italian cookies with flavors of vanilla and sweet almond icing.

Cookie Dough

  • 3 each Eggs large
  • 1/2 cup sugar white
  • 1/2 cup Oil vegetable
  • 1 tsp pure vanilla extract
  • 1/2 tsp salt
  • 1 Tbsp Baking Powder
  • 3 cup AP Flour

Almond Icing

  • 1 cup Confectioners Sugar
  • 1/2 tsp Almond Extract
  • 1-2 Tbsp Cold Milk


For Cookies

  1. In stand mixer with paddle attachment beat together eggs, sugar, oil and vanilla until ingredients are completely together.
  2. Whisk together the flour, salt and baking powder.
  3. Slowly add dry ingredients to the wet ingredients until dough is formed, being careful to not over mix.
  4. Drop by rounded spoon on baking sheet preped with silpat or parchment paper.
  5. Bake cookies for 13 minutes in preheated 350° oven.
  6. After cookies are completely cooled, finish with almond icing and decorative sprinkles.

Almond Icing

  1. Add almond extract to confectioners sugar. Mix as much milk as needed until desired icing thickness is reached.
